Kids will love this smooth and slightly oily sausage
stuffed with Swiss emmental. With its crackly
case, it’s a team fave too. It’s springy, chewy and
not too salty.
2. ENGLISH CUMBERLAND $25/KG, FROM MEAT THE BUTCHER

The coarsely ground minced pork is the juiciest of
all without being too oily. We love the smoky fl avour
that’s enhanced by the herbs and peppercorn.
While the fl esh is a tad tough, it wasn’t gristly
and the skin cut through easily. VERDICT: 7.5
3. SPICY CHICKEN SAUSAGE $22/KG, FROM HUBER’S BUTCHERY
122 UPPER BUKIT TIMAH ROAD, TEL: 6465-0122
This looks appetising thanks to its orangey hue, dotted
with bits of chilli, clove and nutmeg. The chunky meat is
springy and not overly salty. We like the spiciness,
which adds a kick without overpowering the
taste of the meat. VERDICT: 9
4. SPICY ITALIAN $22.80/KG, FROM SWISS BUTCHERY
The crispy skin gave it a nice bite and the minced pork
was very springy. The chilli and paprika fl akes
balance the gamey taste nicely, though some
might fi nd it a bit too spicy.
5. MOROCCAN LAMB $22/KG, FROM VIC’S MEAT. CALL 6753-6900 TO ORDER
It has a strong and robust taste, and a heady aroma when
grilled, which some found a tad pungent. Good if
you like your sausages gamey. Goes great with a
dollop of mustard.
6. ENGLISH PORK SAUSAGE $21.50/KG, FROM HUBER’S BUTCHERY
Speckled with black peppercorn and herbs, the meat
is fi rm and bouncy even if the skin’s a bit tough.
The light peppery fl avour is addictive and the
breadcrumbs give it bite. We want more!
